Thriving at an elevation of 5000 feet, Tobalá takes a remarkable 12 to 17 years to reach full maturity. This agave species yields a Mezcal that is exquisitely intricate, complex, and unbelievably smooth. It takes roughly 25 kilograms of fresh tobalá to produce one liter of mezcal. The piñas can weigh 5 to 50 kilograms on average.
